Welcome to Meal Plan Monday week 3 and I have a question for you: do you have an air fryer? Do you love it? I’m not a big “kitchen gadget craze” type of girl. The is no Instant Pot on my counter, but for some reason I am convinced that an air fryer will change my life… I don’t even oil fry. Is this just another gadget craze?
Here’s what’s on the docket for this week:
Breakfast for dinner– There’s something so comforting about having pancakes, sausage and eggs for dinner. Our favorite pancake recipe comes from the America’s Test Kitchen cookbook.
Fried rice– I will usually add leftover chicken or extra eggs for a boost of protein. Additionally, it is simple to create a “paleo version” at the same time. Check out these recipes for examples of homemade fried rice and paleo fried rice.
Lemon chicken, creamed spinach and orzo– let be honest, this meal is for the grownups. My picky little lady will just be eating the Orzo for this meal and thats ok. You can’t win them all. The trick to good lemon chicken is to tenderize it. We also substitute the breading for almond flour or sometimes go for no breading at all. It’s still good, I promise.
Taco night– it’s a staple if you haven’t noticed yet. The kids love making their own tacos and the dog loves how much cheese they drop on the floor while doing so. This week’s protein? Coconut fried shrimp. Yes please!
Meatloaf and roasted veggies– The great thing about this meal is that you can throw the veggies into the oven to roast about 20-30 minutes before the meatloaf is done. Usually I will include a foiled potato for Miss Picky Pants. She will eat a whole potato, but not the kid-classic tater tots. What gives?
