Meal Plan Monday 1

Pizza night– we are so lucky to have a pizza oven, so we have a blast making pizzas all too frequently. You can’t go wrong with a classic Neapolitan. Our other two favorite combinations are 1. prosciutto, gorgonzola, mozzarella, pear and arugula or 1. salami, mozzarella and balsamic vinegar. Give it a try.

AIP avocado cucumber cold soup– This simple go-to is healthy, filling and quick to make. See a version of this soup here. Do you know why I don’t have a recipe? Read this.

Ground pork tacos– like these. Make the recipe’s pickled onions too and you won’t be sorry. It is a match made in heaven.

Grilled chicken– My favorite is grilled chicken thigh with homemade bbq sauce. We also grill our zuchinni at the same time and if you haven’t tried lemon zest on your zucchini, what are you waiting for?

Korean Beef- It ‘s a crowd favorite. I will substitute the rice with a chopped salad and change out sugar for honey to stick as close to AIP as possible.
